Peanut Butter Frosting

After trying many, many Peanut Butter Frosting recipes, this one is my favorite.  I took an old favorite recipe my mom used for childhood birthday cakes, and added peanut butter.   It creates a light fluffy frosting, easy to spread.

1 cup Almond Milk
6 Tbsp Flour (sifted)
1/2 cup Organic Vegetable Shortening
1/2 cup Earth Balance Butter Spread
1 cup Powdered Sugar
2 tsp Vanilla
1 cup Peanut Butter (not the kind with oil on the top)

1.  Heat almond milk and flour on stove over medium heat, stirring constantly until mixture becomes thick.  Let cool. 
2.  In a mixer, combine shortening, butter spread, sugar and vanilla.  Beat until fluffy. 
3.  Add cooled flour mixture to mixer one spoonful at a time, beat until combined. Once flour mixture is incorporated, beat until light and fluffy.
4.  Add peanut butter.  Beat until light and fluffy.
